The holders are secure, holding 2 6’ rods. I have a few holders on my crate but wanted to bring one more rod, don’t necessarily need both holders.
I can easily get my rod tip above and around them with a fish on, but still am concerned for some reason. Idk lol. Any thoughts?

Look up the Vibe Shearwater 125. They have built in horizontal rod holders, might give you some inspiration. The tip protectors they use can probably be purchased online.
This looks solid. Could you maybe put the rods facing the other way so the tips are behind? Only have to worry about them when casting.
Can you mount them backwards? As they sit, that would be in the way for my style of fishing. I keep most of my rods vertically behind me and find that to be minimally obtrusive.
If I had rods where you have them I be fouling them with all sorts of crap from lures to anchor lines and such.
Why not vertically behind your seat? I have six slots: 2 flush mounts, three on the back of my crate, and one for trolling up front. That’s five rods plus a net, does anyone really need more than that?
Count me in the “spin them around” camp. I wouldn’t want the tips up in the front to get caught up on lines and docks and anything else you may encounter.
I love the horizontal rod holders I built, but mine are positioned so that the reels are right by my side so the rods don’t really stick out past the front of my kayak. I always try to land fish on the opposite side, never had an issue either way though. Just have to work fish around them while bringing them in.
If I were you, I’d try to find a way to mount them a bit further back
