All my friends who are commercial fisherman use a Victorinox knife. We’ve had some heavy debate which knife is most suitable for filleting a fish. The three options are curved flexible, straight flexible, and straight semi-flexible. It would be helpful to hear which type you prefer for filleting fish and why?

  1. I’ve been using a pair of straight flexibles for fileting crappie, perch and small bass for 10 years or more. Love the handles. I had a few wood-grip Normark/Rapala curved flex prior that were decent. I probably only process 3-4 dozen fish in a year.

    This is going to depend on what fish you are cleaning. Is it a smaller fish with thin bones like a stocked trout? I’d grab a very flexible knife to avoid cutting through the spine accidentally.

    Is it a walleye with a stronger bones but long, complete fillets? Use a middle ground knife.

    Is it a rockfish with tough scales and bones like finishing nails? The non flexible knife might help.

    Me personally, I like the victorinox salmon slicer. It’s a flexible straight blade and is tough enough for a lot of fresh and saltwater fish.

    Iv had that exact curved fillet knife for a lllloooonnngg time. I prefer curved because the geometry of the blade feels like it does some of the work for me(at least in my head it does).
