Is it unrealistic to buy this 15ft for getting a high-Lo rig out far? Or should I only be using a fish finder rig with this?

You definitely do not need a 15 foot surf rod. Learn how to read the beach, where the cuts and troughs are and you will be far more efficient. You don’t need to cast a mile, most troughs during high tide are 15-20 yards if not closer from the beach.
