Based on advice from this sub I’ve been looking to get a new Tamarack Pro for around $500 delivered to my door.
Someone about an hour away from me has a Catch 100 and paddle (pictured) for $320. I like to go fishing with my son and they are also selling a Lifetime Wave; which would work well for him for $100. I could easily get them to $400 for both. Seller describes them as “good condition but well used”
Is there any reason I should go with the new Tamarack Pro over the other two and $100 to spend on life jackets?

I’d go with the catch. Better seat, better mold, and it looks to be in pretty good shape. Just inspect it well before you complete the purchase
