Betta Fish: Lids for betta tank

Hello, I've been doing some research on keeping betta fish as im hoping to get one someday although I do have a question about tank lids.

I have lots of plants already and would like to have lots of aquatic plants in whichever aquarium I get. I want to create a similar look to these pictures online but it seems none of these have a lids? Ive heard its best to have a lid incase they jump out which would be awful to happen.

I also like how people have plants that grow out of the tank aswell which doesn't seem to work with a lid.

Also another sort of side question, apart from bettas jumping out im guessing it will make a difference regards to water evaporation and temperature?
