Hi so to make it short I have a 31 litre/ 8 gallon tank with substrate and all the plants you can see in the photo. The dimensions are a bit strange as the tank is tall and wide but a bit narrow in depth (40cm 40cm 19cm). In was recently told by someone in an aquarium store that Bettas don't like tall aquariums and need more depth and that it would get too stressed out? Genuinely didn't understand the whole it'll get stressed and tired of going to the top and am a bit disheartened seeing I was hoping to add a Betta this week after cycling and setting up the tank.

Honestly this is fine, just make sure you have some floating structures at the top so the betta can rest
Betta’s have labyrinth organs, so they need to breathe air. You need a betta cave and a leaf hammock at the top, so it can stay close to the surface. Don’t get a male half moon, double tail or anything with heavy or full fins. A female or male plakat would do well in that tank. Also add more plants so it has plenty of hiding spaces to feel safe.
Yes, it’s good. I’d black out the back for less reflection (reflections can stress some bettas and better esthetics.) Also, let the tall plants get bushy. Bettas love that.
