Recently got sent to the hospital for a week and had a roommate take care of my tank while I was gone, came home to this today and am looking for advice on how to get rid of this algae problem and restabilize the tank!

Wow it got you good. But very common in this hobby. Typically caused by to much light (example being away and not having the light on a timer) and overfeeding. You can try the blackout method with no light and in a dark room for 2 to 3 days to try to starve the algae of light. Monitor your fish closely for stress because once the algae dies it will suck up the oxygen in the tank.
Being hair algae you can remove a lot of with a toothbrush pretty easily.

Chopsticks or barbecue skewers, twirl that shit like spaghetti and remove. Small water change, nutrient control and normal light schedule. The sitter may have overfed or kept the light on.
