So I have inherited this 55 gallon corner tank and the 15+ year old pleco with it. What friends could I add? I also want to add more plants but this dude loves to mess them up when they're small.

Definitely not another big fish. Maybe some small schooling fish so to not add too much bioload, which the pleco produces a lot already.
