Caught just south of Osceola, MO, on the Osage river off of Truman.

You clean them more like a deer instead of filleting it like a fish.

Skin it, pull out the back strap, loins, and belly meat. Then you toss the rest and it tastes horrible. I mean inedibly horrible.

The good meat itself has a firm texture like a chicken breast, but is more oily tasting like a tuna.

    Very rare and protected in my area(Pennsylvania) though, so it might be a while before I get to try it.

    I know pictures don’t always do justice, but I a certain I’ve brought in a bigger paddlefish that hit the scale at 45 pounds. I do agree, it is meet to pull apart the muscles groups on a fish like a deer. I’ve always thought it tasted somewhere between crappie and salmon
