New to fish(ing) in general, but I took up microfishing about a month and a half ago.
I have a tenkara rod with size #28 barbless hooks

Is the first a dace and the second a chub?
Caught in a creek in SE Tennessee, Rhea County

Correct. First is a Western Blacknose Dace. Second is a Creek Chub.
second one is definitely a chub 👌
