Was going to put a fish finder on my kayak. I wanted to do a setup that was simple and easy to put together. Would I need anything else besides these three products from garmin?

You don’t need the first thing if you are buying a device with a transducer and a transducer mounts. All you need is the battery. The device will have some type of mount you can adapt to your kayak.
