    looks delicious, congrats! 

    fillet job is ok but it looks like you deboned it while it was fresh/warm. If your knife is REALLY sharp and you know what you’re doing its not a big deal, but if you’re a beginner it can definitely help to take the fillets off and then put them on ice/in the fridge for a couple of hours before removing the bones. the flesh will firm up and the bones will be easier to cut out without making a mushy mess of the meat.
