I’m using a clinch knot x6-7 wraps, and gobbing it up real good with spit before I tighten it up. I can pull hard on the fly and it feels sound, but somehow the fish Houdini that knot loose.

This used to happen to me before I moved to using an improved clinch knot instead.
Try using a non-slip loop knot. Better action on your fly (more freedom) but more importantly for you, way less likely to break
