He'll eat any of the other options(besides the bloodworms?) i have but always spits out pellets and at this point straight up refuses them. Is he just picky or is there anything i should be worried about?

Some are just picky, mine is. I use this as-well as fluval bug bites, I see you have some of those already. I use the kernels though not the flakes.

I’ve had picky bettas before. Never had one that didn’t like these though.
My dude loathes pellets and shrimp patties. He refuses everything except various types of flakes. I alternate between Omega’s salmon flakes and Fluval Bug bites flakes. He’s mad for them! He refuses everything else and also hates hunting for his food. Flakes it is lol. Good luck!
You don’t need to feed pallets, flakes are fine. Bettas can be picky…mine hates when flakes get too wet for example lol
I have had fish who will refuse pellets and only eat flakes!! They work fine 💕
I found sometimes the pellets are too big for the betta fish. Before trying a different food, if you haven’t, try breaking the pellets up with your fingers before putting them in (into 2-3 pieces). When I use bug-bite pellets and I have to do that for my silly guy.
Also ensure the food don’t blend too much with the substrate. It can be hard for the betta to find sunken food when the substrate is the same color.
I made the mistake of feeding my fish some live food like little mosquito larvae and other types of little ostropods or whatever you cut those little things. And now my female wont eat the pellets either. But she’ll still eat a flake
Spits them out permanently? I’ve known betta that would see a pellet, find that it was too hard/big/whatever but will revisit it later.
Have you tried soaking the pellets (in tank water) first?
Getting my betta on Friday ; I bought Fluval tropical bug bites ( mini granules ones), Hikari tropical (worm shape), Daphnia treats, bloodworms and those Shrimp “”patties”” . Hope a combination of these will work
My boy simon would like to call dibs!
I had a betta whose mouth was just too small to be able to eat the pellets when I first got it. Had to split them with my nail for it to fit, maybe that’s the problem?
I caution against flakes, uneaten flakes will screw up your tank parameters.
Try blood worms. They love it.
