we have no idea how long she was out of her tank but she is acting normal again. she recovered over night and is now eating and interacting with me. her fins won’t move though it looks as if they’re dried in place.

Give it a bit. When stressed (in this case, extremely stressed) they will clamp their fins down. Be sure the water quality is good, turn off the light and let them be for a while
