I have a new, cheap 10 gallon that my kid and I are working on getting set up. The table we want to use is slightly raised on the edges, so only about a half inch is actually touching on either side. I bought a foam leveling mat but even then I’m still able to slide a playing card under it in the center. I’m really hoping to avoid a future catastrophic leak situation. Any advice would be helpful so we can start planting out the tank.

Definitely important for it to be fully supported all around
Important.
Although for a ten gallon it might be okay. Not saying I’d risk it unsupervised personally, but I’ve carried around full ten gallon tanks (also not recommended)… they’re pretty tough.
The levelling mat isn’t necessary for a tank with a rim around the bottom.
How much of a space do you have between the edges? Rimed tank do need support but it’s not as crucial as rimless tanks, most metal stands sold at big box stores don’t support the middle. If you’re worried you can add a simple sheet of plywood or a DIY shelf found at Home Depot, Lowe’s, target, etc.. to put under and support the whole tank evenly.
If it was just the ends hanging off on a 10 it wouldn’t be great still a small risk but likely fine the raised lip and gap in middle is a bigger concern. 10gal are a little sturdier than most tank sizes but be aware those problems violate manufacturers warranty….. I personally would not leave any of my tanks like that, just find somewhere better for it to sit for peace of mind. Also mats and foam should not be used under a rimmed tank you’ll also risk cracking it.
A painted water proof wood board under the tank is a simple solution fyi
