I’m a new betta owner and I started to notice my betta is looking a bit more swole than usual? Is this a sign of pineconing and if so, how can I fix this??

Just looks like bloat to me, which can be normal for a newly established betta! Even good quality food can be a change for their system and they can bloat. Fast him for a couple of days and see if that helps! If not, live or frozen daphnia can help ease any bloating/constipation issues!

Hmm its hard to determine with this quality image, by any chance, how much food do you feed your betta, what type of food, and how many times a day?
