Hi, I was trying to make a leopard shark rig with these supplies. I noticed that the larger hooks have open eyes and Im not sure how to tie the wire leader securely. Any suggestions?

Those are siwash hooks, you crimp them down to your attachment point (ie the loop of wire leader or a swivel)
