
So we have two Jackson Bite kayaks and we're about to switch from using my truck bed to using roof J mounts on my wife's CUV. My question is when it comes to using the tie-downs, based on how the handles are molded as you can see, would it be feasible to run tie downs from the front and rear carry handles back through the roof rack to secure the bow and stern as opposed to using a hood/trunk anchor?

No, a bow line is there for a few reasons.
One is to keep the front of the kayak from lifting up and potentially pulling the rack off your car. The other is for left and right sway (again, from wind force).
Tying it back to the rack is pretty much the same as not having one.
I personally do not use stern lines, but that’s just me.
