I purchased my new beta fish yesterday after my previous beta died. He’s currently in a temporary 2.5 gallon set up while I finish up the 5 gallon no I don’t know if I’ve just gotten lucky with my past betas but this guy seems incredibly shy he’s always hiding behind plants and he always swims away whenever I walk past the tank he won’t come up for food, but he definitely seems interested in eating. I tested the tank and the parameters are absolutely perfect all my previous betas on the exact same day that I got them or at least a day after we’re very active swimming up and down and very happy to engage with me, but he doesn’t seem happy to engage. Could he just be nervous or is this a sign of an underlying health issue?

You got him only yesterday. Poor guy is stressed and needs time to both settle and get comfortable with the new home. He also needs time to become more familiar with you and make the connection that you provide food.
