Filmed some weird minnow behavior can anyone explain why they’re doing this ?
I have do idea what they might be thinking are they trying to eat it?

They are scratching themselves. Normal behavior.

Probably laying eggs on it. Some species of fish lay their eggs on vegetation.

I’m not sure but any chance they are scraping algae, larvae, plankton from the stick to eat? They have no hands, only leverage would be go rushing straight at it
