A daphnia culture would look good, alternatively you could go grab a couple scoops of water from a nearby stream or pond and see what grows, but it could have algae that may cause some aesthetic issues.

You could have like one or two nerite snails (they won’t reproduce in freshwater so no risk of overpopulation) but you would probably need a lid of some sort
