Aquariums: My molly fish gave birth to only 1 fry?
Is this normal? I am a beginner and what should I do if there are more?

Probably just one survivor. Fry food and more plants, some plants on the surface too, will help keeping the fry alive.

I guess the mother is a young mother? I am pretty sure no fry got eaten because the tank and fish are constantly under observation

No there was many but they wen’t to buffet, as a food. They eat their off spring, so for maximum output you need to separate mother and grow fries in another tank
