Is this a mating dance of some sort? I was under the impression that rainbow sharks don't typically reproduce in aquariums.

Yes, key word here, “typically”. Under the right conditions, they’ll mate. However, depending on other fish in the tank, the eggs may get eaten and such, or the fry (if they make it that far) may get eaten. However, they are indeed doing the deed.
