There’s a bunch of stuff in the aquarium gravel. I think it’s either poop or stuff flaking off from the price of driftwood in the tank. All the nitrate/nitrite levels are fine. Should I use a gravel vacuum to try to remove it or just leave it? So far it doesn’t seem harmful

It’s not harmful, just waste like you said. It can be removed easily with your siphon. If it’s poop it can cause some ammonia but if you do water changes its no problem
Just regular detritus and organic waste as long as u do weekly water changes nothing to worry about
