We've had this female betta for 1 week and she is acting very happy, active, and looks healthier than when we got her. Although she has this white poop? Not sure if that's what it is, but is it something we should worry about? Also, does it seem like we are overfeeding her? She was very skinny when we got her.

That is an ovipositor, or what they call an egg spot. All mature females have them.
She greganent
Here’s a photo from above to better judge her weight.

She’s a bit chunky, but it’s not bad, just fast maybe 2 times a week and be sure not to feed over 4-5 pellets. I’m not sure but I believe the white thing is an egg spot like the other person said
My girl got really chonky since bringing her home 😅 We’ve had her about a month. My husband was feeding her 5-6 pellets twice a day, and the bottle says 3-4… whoops. My daughter was like, “Hey mommy, strawberry’s tummy looks round?” I freaked out thinking bloat or swim bladder issues or something scary. Nope. I looked up the body condition chart and she’s just a chonk now 🫣 We cut her back to 3 pellets twice daily, and added in some daphnia treat every couple of days to help ease digestion. But in our defense, she is the most enthusiastic eater I have ever seen (fish wise). Girly pop eats all of her pellets in about 5-10 seconds, and chews so dramatically. Our cat and dog are similar though, so she fits right in with her voracious appetite. I’d only had males who didn’t care much for their pellets in the past, and she’s just on a different level. I would take a video, but I can’t even open my camera fast enough 😂
