  1. Coat them in the seasoning of choice, I use fire smoke fish monger, in the belly I put lemon slices, onion, butter and wrapped in foil. I use a pellet grill @350 and cook until mostly done, the open foil up and crank up the temp to crisp the skin. Just watch the bones.

  2. I use a dill infused olive oil ,s&p, lemon& onion stuffing and throw it in the cast iron skillet when it’s done a squeeze of lemon juice.

  3. Fresh dill, bit of lemon juice, and a couple turns of freshly cracked pepper is pretty well all I use when cooking trout or salmon

Put in tin foil with a half stick of butter in the middle of each fish, spice the hell out of it with garlic and paprika, then wrap it in the foil and put it on the grill at 450 degrees for 10-15 minutes. Can also do the same minus the foil but in a pan.

Most people don’t like trout because of the bones. I generally fillet (and debone) them and sauté in butter, however grilling them whole with onions and herbs inside is a great option, as is seasoning and cooking in foil with some butter because the bones lift right out.
