So I have a 150 liter / 40 gallon tank.
It's pretty well filtered (I have a biomaster thermo 350 and a small sponge filter) and has a decent amount of plants (including a pothos).
It's about a month old, currently have 12 pygmy cories, 12 ember tetras, 3 amano shrimp (and a small number of cherry shrimp/MTS snails and Ramshorn snails that I chucked in from another tank). Also a very pretty albino bristlenose pleco.
While it's not an enormous tank, it is the biggest I've owned and it feels a little empty, especially when I'm not up close to it.
The aqadvisor website has me at about 55% capacity so I have a little room to add some more.
Do I go for another group of nano fish or something a bit more "centrepiecey" like a couple of Honey Gourami?

It depends on your preferences. If you wanted to have complementary colors you could get away with a school of green neon tetras, or harlequin rasboras. Black skirt tetras are also a bit bigger/more showy than the smaller tetras, or the black phantom tetras.
A red thick lipped gourami sometimes mislabeled as honey gourami would look really pretty. A few honey gourami would work.
You could add both the gourami and more nano fish, plenty of capacity from what you’ve said.
I’d say look at other tetra species, rasbora, or smaller rainbow fish (like praecox or threadfin), in addition to the gouramis (even a pair of pearls would be fine)
Side note: holy crap that biofilm!
Tank looks clean 👌 I’d say go for a centerpiece like honey gourami, your stocking already looks nice so just don’t overdo it.
