Have you tested your water? If it’s within good parameters, I’d be curious if it was maybe the food. Looks like flakes from these pics, and protein pellets seem to be the common recommendation here

There is a red-loss gene in bettas where they will lose red coloration as they age and will go clear.
If your plants are dying, that is something to correct, but him dropping red and going clear isn’t necessarily a sign of a problem.
Thia dude has some translucent parts on his tail & fins. That the way he’s supposed to be though (came from a top breeder this way). It’s not necessarily bad 🙂
