First time trying to weedless rig a soft bait for pike. Started with a 6/0 but the hook gap felt way too tight, so I tried a 12/0 instead.
Does this look reasonable-ish?

Looks solid! I would slide that bait keeper (white plastic thing on the hook shank) up to the bottom of the belly to hold the bait in position and keep the point tight to the baits back. I am curious about that hook and screw pin though, looks like a bkk hook, but I’ve never seen a screw pin like that. What’s going on there?

Take what you’ve got and pull the body of the bait at the tip of the hook forward ever so slightly, then lift it up and let it slide back so the tip of the hook gets buried juuust a little bit in the bait plastic. That’ll get you truly needless.
It’s an optional step though and other than that, looks great!

I don’t know the hook kit, but it feels like that split ring should be between the parts and not sticking forward. That would push the hook back and down a bit and give a bigger bite gap too. Assuming uou tie on above the slide on weight on the other picture.
You usually slide the plastic thing back so the plastic stays relatively in place too.
