I made a mounting plate for a trolling motor for my old town sportsman 106 out of 2 cutting boards glued together and a few threaded inserts a U bolt. Any ideas for improvement please send them my way. Not finished product but it’s decently solid and I’m happy with it.

This is good but ideally you want a backing plate under the mounting plate on the inside of the kayak. If you have access with a hatch that’s what I would do!
Is it just 2 small bolts holding it to the kayak?
I like your work. What did you use to cut the boards? I found a Dremel disc is too weak and other tools tend to melt the boards even at low speed.
